If you get a chance, consider kayaking along the inner streams of the island. There's a place right across the street from the marina that has kayaks with a nice entry point.
The Bald Head Island conservancy group is a really excellent organization - one of the only places where sea turtles are hatched on the coast in a big way. They operate a small store by the shoals end - you've probably been to the store already. The conservancy often has tours and walks and is a wonderful thing to do. Tell Susan, the director, that we said hi!
